Ingredients
- 1/4 cup raspberry preserves
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- Freshly ground black pepper
- 2 tablespoons finely chopped onion
- 1 cup fresh raspberries
- 1 pound turkey breast meat, cooked and cut into 1-inch pieces
- 4 cups chopped Bibb lettuce

Preparation
Step 1
In a medium bowl, whisk together raspberry preserves, oil, vinegar, mustard and pepper. Add onion and raspberries then diced turkey; gently toss to combine. Arrange lettuce on dinner plates and spoon turkey mixture on top just before serving.
SERVING SUGGESTION: Sliced English cucumber drizzled with lemon juice and olive oil and sprinkled with chopped fresh dill. Add whole grain rolls and butter.
GLUTEN FREE: Make sure preserves, vinegar and Dijon mustard are gluten free.
