Ingredients

  • 1 1/4 cups whole-wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups Kellogg's All-Bran Buds cereal with psyllium
  • 1 1/4 cups buttermilk
  • 1/4 cup applesauce
  • 1/4 cup brown sugar
  • 1 egg
  • 125 ml (1/2 cup) raisins

Preparation

Step 1

1. Combine flour, baking powder, soda and salt. Set aside.

2. In a large bowl, combine cereal and milk. Let stand for 2 minutes or until cereal is softened. Add applesauce, sugar and egg. Beat well. Stir in raisins.

3. Add flour mixture, stirring just until combined. Portion batter evenly into 12 greased or paper-lined 6 cm (2 1/2") muffin-pan cups.
