Ingredients

  • 2 medium oranges -- thinly sliced
  • 4 chicken quarters
  • Salt and pepper
  • 1 1/2 cups orange marmalade
  • 1/2 cups plus 2 Tablespoons honey
  • 1 1/4 teaspoons cinnamon
  • 3/4 teaspoon ground cloves
  • 2 1/2 teaspoons rosemary
  • 1/3 cup orange juice

Preparation

Step 1

Place the sliced oranges in the bottom of a shallow baking pan. Arrange the chicken on top of the orange slices. Sprinkle with salt and pepper. Combine the orange marmalade, honey, cinnamon, cloves and rosemary. Brush about 1/3 of this sauce over the chicken. Place the baking pan into a larger shallow pan of hot water (so the sauce won't burn). There should be an inch of water in the outer pan.

Bake at 350 for 1 1/2 hours, basting every 30 minutes. In a saucepan, add the orange juice to the remaining sauce and bring to a boil. Serve the sauce on the side.
