Ingredients
- 1 1/2 cups uncooked pearl barley
- 1 10 ounce package frozen corn
- 1/4 pound deli meat -- or other meat
- 1 Tablespoon olive oil
- 1 red onion -- cut into 1/2" dice
- 2 Tablespoons honey mustard
- 1/2 cup cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 carrots -- sliced
- 2 scallion -- sliced
- 2 apples -- cut into 3/4" cubes

Preparation
Step 1
In large saucepan, cook barley as label directs adding corn the last 4 minutes. Drain; place in bowl. Julienne meat.
In same pan, in oil, over medium heat, saute meat and onion 2 minutes. In a cup, mix mustard, vinegar and seasonings. Add to pan. Cook 2 minutes; add to barley with carrots, scallions and apples.
