Juice Pulp Everything Muffins

I haven't made this yet, but I just bought a juicer and hate to throw out all that pulp.

Ingredients
- Here is what I added:
- + 1 cup of leftover juicer pulp (I packed the cup pretty full, and I’m pretty sure I added some extra pulp in the process of mixing as well)
- + 1 1/2 cup of flour
- + 1 tsp cinnamon
- + 1/2 tsp baking soda
- + 1/2 tsp salt
- + 1/4 cup oil (coconut or canola will do just fine!)
- + 1/4 cup agave
- The recipe also called for 1/4 cup of apple sauce, but I skipped it and used more pulp instead!
- + about 1/4 – 1/2 cup of orange juice (the mix just wasn’t wet enough)
- + lime juice (squeezed from a quarter of a lime)
- + raisins, sunflower seeds, flax seeds, a splash of vanilla (other various dried fruits, nuts, flavors of your choice will most likely work!)

Preparation
Step 1
+ I placed the pulp in a large bowl first and sorted through it to make sure there weren’t any leaves /seeds / questionable chunks in my pulp.
+ The mix will be thick and dense, however, If your mix is too thick for your liking, additional splashes of orange juice or almond milk won’t hurt!
Love these! I used a mostly carrot w a bit of celery/apple pulp and they were fabulous. I added an egg, flax seeds, and raisins. Thanks so much for sharing :)
I also forgot to note that I switched out the regular flour for whole wheat.
Spray a little bit of baking spray on some mini muffin tins, overfill them with the batter (they aren’t going to rise much), pop them in the oven for 10-12 minutes and let cool.
