Ingredients

  • 2 cups wheat berries
  • 7 cups water
  • 1 cup chopped walnuts
  • 2 medium apples -- unpeeled, cored and chopped
  • 1 cup finely chopped parsley
  • 1/4 cup apple cider vinegar
  • 1/4 cup apple juice
  • 1 Tablespoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 cup olive oil
  • 1/8 cup lemon juice

Preparation

Step 1

Soak wheat berries in water enough to cover for at least 6 to 8 hours or overnight. Drain water and set aside.

Bring 7 cups of water to a boil. Add wheat berries to the boiling water and simmer uncovered for about 50 minutes or until they are totally cooked through. They should be firm and chewy. Drain the water and set aside to cool.

Add the remaining ingredients to the wheat berries and mix thoroughly. Add more salt if necessary.
