Ingredients

  • 1 1/2 lbs ground beef
  • 1 lb italian sausage
  • 1 large red onion
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 or 2 cans beef stock
  • 1 12-oz can beer
  • 1 14.5-oz can crushed tomatoes
  • 1 4-oz can chopped mild green chilies
  • 1 small can tomato paste
  • 1 14-oz can red kidney beans, rinsed and drained
  • 1 8-oz can great northern beans, rinsed and drained
  • 1 8-oz can black beans, rinsed and drained
  • 1 envelope chili seasoning
  • Salt to taste

Preparation

Step 1

Brown ground beef and sausage in a large dutch oven. Remove meat and discard drippings. Add onion and bell peppers, saute 5-7 minutes till tender. Stir in meat, 1 can beef stock, beer, tomatoes, tomato paste, mild green chilies, and seasoning. Simmer 1-1 1/2 hrs. If mixture becomes too thick, add the second can of beef stock. Add beans during last 20 minutes of cooking. Add salt to taste.
