  • Dressing:
  • 1 cup quinoa
  • 2 cups boiling water
  • 1 cup unpeeled, seeded and diced cucumber
  • 1/2 cup chopped dried apricots or golden raisins
  • 1/2 cup canned drained Mandarin orange sections, halved
  • 1/4 cup toasted slivered almonds
  • 2 thinly sliced green onions
  • 2 Tbsp chopped parsley
  • 1 tsp lemon or lime zest
  • 3 Tbsp fresh lemon or lime juice
  • 1 Tbsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp cumin
  • 1/4 tsp coriander

Step 1

Rinse quinoa under cold running water 2 minues; drain. In a medium saucepan, stir quinoa into boiling water. Reduce heat, cover and simmer 15 minutes or until water is absorbed and quinoa is transparent; drain and let cool. In a salad bowl, combine quinoa, cucumber, apricots or raisins, orange sections, almonds, onions and parsley. For the dressing: Mix all ingredients. Pour dressing over salad; toss to mix. Serve immediately or refrigerate.
