Ingredients

  • 1 pkg shrimp (peeled and deveined)
  • 2 tbs olive oil
  • 2 lbs boneless chicken breast (cut into chunks)
  • 2 tsp minced garlic
  • 1 red bell pepper (sliced)
  • 2 Roma tomatoes (diced)
  • 3 cups minute rice
  • 1 pkg Goya con saffron
  • 1 tsp paprika

Preparation

Step 1

In a large saucepan, boil 3 cups of salted water. Cook shrimp in water until they are opaque. Reserve liquid.

Heat oil in a large skillet. Cook chicken pieces in skillet until they are golden brown. Remove from skillet and set aside.

Add garlic, peppers, and tomatoes to the skillet and cook until they are softened.

Pour stock into skillet with 1 cup of salted water, saffron, and paprika. Bring to a boil. Remove from heat and stir in rice. Allow to set 10 - 10 minutes. Add shrimp and chicken and stir.
