Ingredients

  • • 2 boxes (12 ounces each) vanilla wafers
  • • 2 packages (6 ounces each) sliced almonds
  • • 1/2 cup unsweetened cocoa powder
  • • 1 bag (12 ounces) mini semisweet chocolate chips
  • • 1 package (14 ounces) coconut flakes
  • • 1/2 cup powdered sugar
  • • 3 food storage bags (1 gallon size)
  • • 1 cup light Karo corn syrup
  • • 1 1/2 cups Captain Morgan's Spiced rum (do not use 151, too strong)
  • • 1 cup powdered sugar, for rolling the finished balls

Preparation

Step 1

1. Put vanilla wafers in sturdy zip lock bag (1 box at a time) and step on them to crumble them. (You may dance on them and sing Christmas carols if you like.)
2. Do same with almonds.
3. Put in large mixing bowl.
4. Add 1/2 cup powdered sugar, 1/2 cup cocoa, 1 package coconut, and 1 bag mini chocolate chips.
5. Mix, then add the rum and Karo syrup. (Works best to knead with hands)
6. Refrigerate for a couple of hours.
7. Roll into balls about 1 inch in diameter, then roll in powdered sugar.
8. Refrigerate overnight to let flavor' s mingle.
Makes about 120 balls.
