Blue Cheese & Roasted Squash Pizza
1/2lb store-bought pizza crust (makes 6 pies)"
Preheat oven to 450F. Adjust rack to center of oven. Place baking sheet(s) in oven to heat. Divide dough into 6 equal balls. Working in batches, roll out 2 balls @ a time to form 8" circles. Transfer each onto parchment paper.

- 1/2 c diced butternut squash
- 1/4 c diced onion
- 5 T EVOO
- 1 t salt
- 1/4 t ground pepper
- 2 T grated pecorino cheese
- 4 T crumbled blue cheese

Preparation
Step 1
1. In a lg bowl, toss squash & onion w/ salt & pepper.
2. Spread vegetables in a single layer on a baking sheet.
3. Roast until tender, about 20 min; set aside.
4. Prepare dough.
5. Sprinkle pecorino onto 2 dough circles.
6. Spoon the vegetables evenly onto both pies.
7. Sprinkle each pizza w/2T blue cheese & 1T EVOO.
8. Drizzle 2T oil onto preheated sheet.
9. Use parchment paper to slide dough onto hot sheet, the discard.
10. Pierce dough w/ fork several times.
11. Bake for 10-12 min or until crust is crispy.
