Ingredients
- 2 1/2 cups vanilla wafer crumbs (1 -12 oz box= Just under 3 cups ground)
- 1/2 cup powder sugar, sifted
- 1 cup pecan halves, finely ground in food processor (1 c whole=1cup ground)
- 6 oz semisweet or bittersweet chocolate, broken in pieces (I use chocolate chips)
- 1/2 cup bourbon
- 3 TBS light corn syrup
- granulated

Preparation
Step 1
1. Place cookie crumbs, powdered sugar and ground pecans in a lrge bowl to stir and combine.
2. Melt the chocolate in the microwave or in top of double boiler over simmering water. Stir in bourbon and corn syrup. Add chocolate mixture to dry mixture and stir well to combine. Let sit for 30". Place some granulated sugar in a small bowl.
3. Roll Mixture between your palms into 1" balls, then roll in sugar to coat evenly. Place balls in airtight container, separating layers with foil or waxed paper.
Cookies taste best if allowed to sit overnight, even better after a few days.
Can substitute Grand Marnier, dark rum or kahlua for the bourbon.
