Ingredients
- 1 lb Italian sausage
- 2 cups white onion, chopped
- 2 cups carrots, chopped
- 2 Tbsp garlic, minced
- 2 cups mushrooms, sliced
- 14.5 oz Italian stewed tomatoes
- 1 large can crushed tomatoes
- 4 cups chicken broth
- 1 cup broken lasagna noodles
- 2 cups chopped fresh spinach
- grated mozarella cheese
- grated parmesan cheese
- spices to taste
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 Tbsp oregano
- 1 Tbsp basil
- 1 Tbsp Italian seasoning
- dash red pepper flakes

Preparation
Step 1
Brown sausage in a large pot or skillet. Add onions and carrots. Saute for 3 minutes. Add garlic and mushrooms and saute for 3 minutes, Add chicken broth, stewed tomatoes, crushed tomatoes, and spices. Bring to boil. Add pasta and cook for 10 minutes. Add spinach and stir until wilted.
To serve, place mozarella cheese in bottom of bowl. Add soup and top with parmesan cheese.
