  • 2 tablespoons unsalted butter
  • Kosher salt and freshly ground black pepper
  • 2 cups leftover stuffing
  • Pure maple syrup
  • 4 large eggs, poached

Preparation

Step 1

Grate sweet potato on the large holes of a box grater. Heat butter in a medium nonstick skillet over medium heat. Add sweet potato, season with salt and pepper, and cook, stirring occasionally, until tender, about 5 minutes. Add leftover stuffing and cook, pressing down firmly, until brown and crisp on the bottom, 6โ€“8 minutes. Turn, drain any excess liquid from pan, and continue to cook until other side is brown and crisp, 6โ€“8 minutes.

Drizzle hash with maple syrup, season with salt and pepper, and serve with poached eggs.
