Ingredients

  • 1/3 c. cornstarch I 1/4 c. sugar
  • 1/4 tsp. salt I 1/2 c. boiling water
  • 3 eggs, separated 1/3 c. strained lemon juice
  • 2 Tbsp. butter 1/2 tsp. grated lemon rind
  • 6 Tbsp. sugar
  • I baked 8 in. pie shell

Step 1

Mix cornstarch, sugar and salt in top of double boiler; add boiling water and blend thoroughly. Cook over direct heat, stirring constantly until mixture is thick and clear. Beat egg yolks and stir in a little of the hot mixture. Pour back into double boiler and cook 2 minutes longer, stirring constantly. Remove from heat; add lemon juice, butter and lemon rind, mixing well. Cool and pour into pie shell. Beat egg whites until barely stiff. Add 6 Tbsp. sugar gradually beating until stiff. Swirl over pie filling so as to touch crust edges all around. Place in 350 deg. oven 12-15 minutes or until golden brown. Cool on cake rack before cutting.
