Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose four
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 60 peanut butter cup candies, unwrapped

Preparation

Step 1

1. Heat oven to 375 degrees F.
2. In large mixer bowl, cream butter, peanut butter and sugars; beat in egg and vanilla. Blend in flour, soda, and salt.
3. Shape dough into 1 1/4 inch balls and place in ungreased 1 1/2 inch muffin cups. Bake 8-10 minutes.
4. Remove from oven; immediately press 1 peanut butter cup in the center of each cookie. Cool; refrigerate to set.
