Ingredients

  • 3 c. ketchup
  • 2 c. packed dark brown sugar
  • 3/4 c. mango juice or nectar
  • 3/4 c. fresh or frozen reconstituted passion fruit juice
  • 3/4 c. fresh orange juice
  • 3/4 c. pineapple juice
  • 1/2 c. fresh lime juice
  • 1/2 c. golden syrup*
  • 1/2 c. lemon juice
  • 1/2 c. grapefruit juice
  • 1/4 c. finely grated onion
  • 1 1/2 Tbsp. dry mustard
  • 1 1/2 tsp. fround white pepper
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. Kosher salt
  • 1/2 tsp. ground cumin
  • 2 Tbsp. plus 2 tsp. cornstarch

Preparation

Step 1

1. Whisk all ingredients except the cornstarch, together in a large, heavy saucepan.

2. Transfer 1/4 c. of mix to a small bowl and whisk in cornstarch until dissolved.

3.Whisk this mix into the large pot.

4. Cook over medium-high heat until sauce comes to a boil, stirring constantly.

5. Boil for one minute stirring constantly.

6. Serve warm or at room temp.
