Pork Medalliions with Maple Vinegar Sauce

Ingredients
- 1 pork tenderloin, about 3/4 lb., cut into 1 inch thick slices. Seasoned pepper (garlic pepper or a pepper blend)
- 2 tsp. butter
- 2 tbsp. finely chopped green onions
- 1/2 cup chicken broth
- 2 tsp. mustard
- 1 tbsp. maple syrup
- 1 tbsp. balsamic vinegar

Step 1
With the heel of your hand gently flatten pork slices to a thickness fo about 14 inch. Season both sides of medallions with seasoned pepper.
In a large heavy skillet heat butter over medium high heat. Cook medallions for 3-4 minutes per side, turning once, until nicely browned Remove medallions, keep warm.
Add onions to skillet; cook and stir for 30 seconds. Stir in chicken in maple syrup and vinegar. Continue cooking, uncovered, for a minute more, until sauce thickens slightly.
Return chops to skillet; heat through; serve chops with pan sauce.
Makes 2 servings.
