Salad Dressing - Olive Oil Vinaigrette

Ingredients

  • 2 cloves garlic
  • 1/2 c vingegar (such as white, sherry,cider, port or champagne)
  • 1/1 /2 tsp. dijon mustard
  • 3/4 tsp. salt
  • 3/4 tsp. ground pepper
  • 1 1/2 cups extra-virgin olive oil
  • 1/4 cup finely chopped shallots OR red onion

Preparation

Step 1

This makes 2 /14 cups
In food processor w/ metal blade attached, mince garlic. Add vinegar, mustard, salt/pepper. Process to combine. With motor running, slowly drizzle inoil until dressing is emulsified. Takst and add addtional salt/pepper if necessary.
