  • 2 1/2 tablespoons yellow mustard seeds
  • 3/4 cup cranberry juice
  • 3/4 cup prosecco
  • 1 cinnamon stick
  • 1 (1/2-inch) slice of ginger
  • 3 star anise
  • 1 1/2 cups sugar
  • 1 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cups dried cranberries
  • 1 teaspoon orange zest, from 1/2 orange
  • 1/8 teaspoon kosher salt

Preparation

Step 1

Put mustard seeds in a bowl.
Boil cranberry juice on medium heat.
Pour juice over seeds and let soak one hour.
Contain cinnamon stick, star anise, and ginger in cheesecloth and tie it closed.
In a saucepan, simmer mustard seeds with juice, sugar, vinegar, prosecco, and bundled spices on medium.
Whisk in Dijon mustard. Turn heat down to medium low and simmer for about 25 minutes to thicken.
Add cranberries, cooking another 10 minutes.
Stir in orange zest and let cool to room temperature.
Chill in the fridge until serving time.
