Ingredients
- 4 slices bread
- 2 tablespoons butter, softened
- 4 eggs
- 2 cups roasted vegetables, reheated or room temperature
- Salt and pepper to taste

Step 1
Preheat a large skillet to a high heat. Use a knife or biscuit cutter to cut out a large circle in the center of each slice of bread. Butter slices on one side only. Grill bread butter-side down until lightly toasted. Lower to medium heat and crack an egg into each bread hole. Season with salt and pepper to taste. While frying, divide roasted vegetables evenly and place on four dinner plates. Fry eggs about 3 minutes, or until yolk begins to harden slightly. Place toast and eggs on each plate and serve immediately.
Makes 4 servings.
