Ingredients
- 1 cup celery (chopped)
- 1 cup green peppers (chopped)
- 1 cup onions (chopped)
- 1 1/2 sticks butter (divided)
- 2 teaspoons poultry seasoning
- 2 teaspoons celery seed
- 1/2 teaspoon red pepper flakes
- 2 loaves potato bread (sliced)
- 1/2 cup turkey drippings
- salt and freshly ground black pepper
- turkey drippings from the bottom of the roasting pan
- 1 onion (finely chopped)
- 1/4 cup flour
- 1/4 cup water
- 4 cups turkey stock (plus more)

Preparation
Step 1
Melt 4 tablespoons of butter in an electric skillet or a large nonstick skillet. Once melted, add the celery, peppers, onions, poultry seasoning, celery seed and red pepper flakes. Season with salt and pepper and sauté until translucent (about 6 minutes).
Meanwhile, tear up all of the bread into small dime-size pieces. Place in a large bowl and moisten with some hot water. The bread should be moist, not soggy and wet. Add the moistened bread pieces, pan juices from the turkey, 1 stick of melted butter and salt and pepper to the cooked vegetables. Stir to combine. Serve stuffing with turkey gravy on the side.
For the Turkey Gravy:
In a skillet on medium-high heat, add a few tablespoons of butter, some drippings from the turkey and the chopped onion. Season with salt and cook until translucent (about 5 minutes). Combine the flour and water in a separate bowl; whisk to combine until there are no lumps. Add the flour mixture to the roasting pan and stir to combine. Bring to a simmer, stirring constantly, and cook for an additional 2 minutes. Slowly whisk in the turkey stock and bring to a simmer. Cook until thickened, stirring constantly. Add more stock for desired consistency. Season with salt and pepper.
