Ingredients

  • 4 ½ cups cooked rice
  • 1/4 cup (1/2 stick) butter or margarine
  • 3/4 cup snipped parsley
  • 1 jar (2 onz) chopped pimiento, drained

Preparation

Step 1

Prepare rice. While hot, stir in butter, parsley and pimiento.

Pack rice mixture into a buttered 5½- to 6-cup microwave-oven-save ring mold. Cover with plastic wrap. Heat thoroughly in microwave oven (5 to 6 minutes at Medium-High).

Remove from oven and remove plastic wrap; let stand 3 minutes. Unmold on a warm serving plate. Fill ring as desired.
