Ingredients

  • 2 sweet potatoes, peeled and cubed
  • 2 chopped apples (pink lady works well)
  • 1 chopped vidalia onion
  • 1 tsp dried thyme
  • pinch of salt and pepper
  • 1 lb pork (boneless pork shoulder) cubed 1 inch
  • 3 cups of natural apple cider
  • 2 tbs cornstarch
  • 1/4 cup water

Step 1

Add to slow cooker, sweet potatoes, apples, onion, thyme, salt and pepper. Place pork on top. Pour apple cider in the slow cooker. Cook on low for about 8 hours. During the 7th hour, mix cornstarch and water together and pour in stew. Stir well. Allow to thicken stew.
