Ingredients
- Cream cheese is mixed with the traditional ingredients to add extra tartness and smoothness
- 3 egg yolks
- 1 3-ounce package cream
- cheese, cubed and softened
- Dash cayenne
- 1/2 cup butter or margarine
- 1 tablespoon lemon juice
- Halved lemon slice (optional)
- Fresh dill sprig (optional)

Preparation
Step 1
Place egg yolks, softened cream cheese, and cayenne in blender container. Cover; blend at low speed just till cheese is nearly smooth, about 5 seconds. In a small saucepan, heat butter or margarine and lemon juice till butter is melted and almost boiling. Turn blender on high speed. With lid ajar, slowly pour in butter, blending till mixture is thick and fluffy, about 30 seconds. Pour into saucepan or top of double boiler. Heat over warm, not hot, water till ready to serve. Garnish with lemon and fresh dill, if desired. Makes 1 1/4 cups sauce.
