Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 jalapeno, seeded and minced (or more)
- Frozen corn and green beans
- 3 garlic cloves, minced
- 2 (15 ounce) cans pinto beans, rinsed and drained
- 2 cups beef broth
- 1 (14 1/2 ounce) cans tomatoes with jalapenos
- Tomato sauce
- 2/3 cup barbecue sauce
- 1 teaspoon chili powder (or more depending on how much heat you want)
- 1/2 teaspoon salt
- 1/2 cup low-fat cheddar cheese, shredded
- light sour cream

Step 1
Sautee garlic in olive oil and add beef, pepper, onion, jalapeno over medium high heat stirring for 5-10 minutes or until beef is browned.
Transfer mixture to crockpot and stir in remaining ingredients.
Cover and cook for 8-10 hours on low (4-5 hours on high).
Serve in bowls topped with cheese and sour cream if desired
