Tuscan Pork Roast

Ingredients
- 4 slices of bacon (cut into 1-inch pieces)
- 2-3 lb pork roast
- 2 tsp minced garlic
- 1 tsp dried rosemary
- 1/2 tsp ground sage
- 1/2 tsp salt
- 1/3 cup white wine
- 3 TBS all purpose flour
- 3 TBS water

Step 1
Butter the inside of a slow cooker or roast pan.
Cook bacon in 10-inch skillet until crispy. Remove bacon and place along the bottom of the slow cooker or roast pan.
In a small bowl. crush rosemary and add garlic, salt, and sage. Mix well. Rub all sides of the roast with the mixture.
In the same skillet used to make bacon, sear the roast on all sides until brown (2-3 minutes on each side). Place roast in the crock pot or roast pan.
Pour the wine in the skillet and use a whisk to loosen up browned bits. Pour over the roast.
Crock pot: Cook on low 6 - 8 hours or on high 4 - 6 hours.
Oven: Preheat oven to 350 degrees and bake for 2 - 3 hours.
Mix flour and water and stir into juices of roast when done cooking to make gravy.
