Ingredients
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- pinch salt
- 1/3 cup finely chopped candy canes
- 3/4 cup sugar
- 1/3 cup butter or margarine -- at room temperature
- 2 egg whites
- 1/2 cup buttermilk

Step 1
In a bowl, mix together flour, baking powder, baking soda and salt. Stir in chopped candy canes.
In a bowl, using an electric mixer, beat together sugar and margarine until well combined. Add egg whites, one at a time, beating well after each addition. Alternately beat in flour mixture and buttermilk, making three additions of flour mixture and two of buttermilk, beating until smooth.
Spoon batter into prepared cupcake pan. Bake at 350 for 20 to 25 minutes.
