  • 4 large potatoes -- shredded
  • 1/4 cup oil
  • 1 medium onion -- diced
  • 1 box mushrooms -- sliced
  • 1 zucchini -- cubed
  • 1 red pepper -- cubed
  • 3 eggs
  • Salt -- pepper, garlic powder

Step 1

For the crust, spread potatoes into an 8 inch square pan or a 9 inch round. Drizzle with oil. Bake at 400, covered for 2 minutes, uncover and bake an additional 20 minutes or until crispy and golden brown.

Saute additional vegetables until soft. Spice with spices. Combine with eggs and pour into crust. Bake at 350 for 50 minutes, until golden brown.
