Ingredients
- 2 1/2 cups all-purpose flour
- 1 1/4 tsp. salt
- 6 tbsp. unsalted butter, chilled and cubed
- 3/4 cup vegetable shortening, chilled
- 2/3 cup ice water

Step 1
1. Mix flour and salt together in large bowl. Add cup cold shortening and cold unsalted butter.
2. Cut butter and shortening using pastry blender until mixture resembles coarse meal (a few larger bits is ok).
3. Slowly add in ICE water (must be very cold), stirring after each tbsp. of water added. Stop adding water when the dough begins to clump.
4. Roll out dough on floured surface. (Dough should come together easily and not feel too sticky.)
5. Form dough into a ball. Divide in half. Using your hands, flatten each half into 1-inch thick discs. Wrap each disc tightly in plastic wrap and refrigerate for at least 1 hour (or up to 5 days or in the freezer for up to 2 weeks).
