Ingredients

  • 4 med. sweet potatoes peeled & cubed
  • 2 Tbls. olive oil
  • 1 Gala apple finely chopped
  • 2 ribs celery
  • 1 med. onion finely chopped
  • 1 1/2 lb. ground turkey
  • 1/3 cup whole wheat bread crumbs
  • 1 egg
  • 1 Tbls. poultry seasoning
  • 1/2 cup buttermilk
  • 3 Tbls. honey
  • salt & pepper to taste
  • 1/4 cup fresh parsley
  • 2 Tbls. fresh thyme finely chopped

Preparation

Step 1

Preheat oven to 425.

Cook potatoes until tender. Brush side and bottom of cupcake tin with some olive oil.

Put the olive oil in a skillet on med. heat and sauté the apple, celery, and onion until softened about 5-6 minutes. Cool.

In a large bowl combine turkey, bread crumbs, egg, poultry seasoning, and cooled veggie and apple. Salt and pepper to taste.

Using a ice cream scoop, fill each cupcake with mixture.

Cook 12-15 minutes.

Drain Potatoes put in food processor, add honey, buttermilk and seasoning.

Can frost each cupcake with potatoes.
