Ingredients
- Rice:
- 2 lb ground beef (or ground turkey or combo of the two)
- 1 yellow onion (diced)
- 1-2 jalapeños (depending on size) (deseeded and diced)
- 5 14oz cans chili beans
- 28 oz can petite diced tomatoes
- 3 TBS Fiesta Quick Chili Mix
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup long grain rice
- 2 cup water

Step 1
In large skillet, cook beef with half the onion until no longer pink. Remove from heat. Stir in remaining onion and jalapeño.
In crock pot, add beans, tomatoes, seasoning, salt & pepper. Mix well. Use beef broth to rinse cans. Stir in meat mixture.
Cook on low for 8 - 10 hours, or on high for 4 - 6 hours.
Bring water or broth to a boil. Add rice. Cook 15-20 minutes. Fluff with fork.
