Ingredients

  • 1 medium sweet onion, chopped
  • 1 large red bell pepper, chopped
  • 3/4 cup sugar
  • 3 canned chipotle peppers in adobo sauce
  • 1 Tbsp. salt
  • 1 Tbsp. coriander seeds, crushed
  • 1 Tbsp. Dijon mustard
  • 4 cloves garlic, smashed
  • 6 whole cloves
  • 2 cups white wine vinegar
  • 1 cup water
  • 1/2 cup unsweetened pineapple juice
  • 6 ears fresh corn, cut into 1/2" rounds

Step 1

The day before: in a stainless steel pot combine all ingredients except corn. Bring mixture to boiling, stirring to dissolve sugar and salt. Add corn; return to boiling. Reduce heat; simmer, covered, for 5 minutes.

Transfer corn, onion, and peppers to three 1 qt. glass jars. Pour pickling mixture over vegetables, cool. Cover; chill overnight.

Use for tailgating or other parties.
