Tropical Salmon Skewers

this zone recipe makes an 8 block meal. It uses mainly unfavorable carbs (pineapple) but it is soooo tasty! We only have this once every 1 to 2 months since it isn't very favorable. We like to have salmon once a week so this is a nice change from our usual method of baking in the oven.

Ingredients
- 12 oz salmon
- 3 cups fresh pineapple (cubed) canned works also (6 carbs)
- 1 tablespoon olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame seeds
- salt & pepper
- Tossed Salad
- 1 block fruit

Preparation
Step 1
Cut salmon into cubes. In a bowl, mix olive oil, apple cider vinegar, soy sauce, salt, & pepper. Add the fish & let marinate for 10 mins. Drain then place alternating cubes of salmon & pineapple onto a skewer. Cook on a smooth, non-stick grill for a few minutes on each side, to desired donness. Place on a serving dish & sprinkle with sesame seeds.
