Ingredients
- 2 cups whole grain pastry flour
- 1 1/2 teaspoons ground ginger
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon ground cloves
- 1/2 cup molasses
- 3/4 cup light soy milk
- 1 tablespoon grated fresh ginger (optional)
- 1 cup pumpkin puree
- 1/2 cup walnuts, chopped

Preheat the oven to 350°F. Coat a nonstick bread pan with cooking spray.
In a large bowl, combine the flour, ginger, baking soda, salt, cinnamon, and cloves. In a separate large bowl, mix together the molasses and milk. Add the flour mixture and
the fresh ginger, if using. Add the pumpkin and the walnuts. Pour the batter into the prepared pan. Bake for 40 to 45 minutes, or until a wooden pick inserted in the center
comes out clean. Let the bread cool before slicing.
