- 1 large red onion, cut into thin slices
- 1 1/2 tablespoons brown sugar
- 6 tablespoons red wine
- 1 1/2 tablespoons balsamic vinegar
- salt & fresh-ground black pepper
- 3 tablespoons Dijon mustard
- 1 1/2 teaspoons lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon minced garlic
- 4 boneless skinless chicken breasts
- 8 scallions, trimmed

Step 1
1. Combine onion and sugar in pan, cook over moderate heat, stirring frequently, until the onion begins to turn golden and caramelize, about 20 mins.
2. Stir in wine and vinegar, bring to a boil. Reduce heat and cook, stirring, until most of the liquid evaporates, about 10 mins. Season and let cool.
3. Whisk together mustard, lemon juice, Worcestershire, garlic, and 1/2 tsp pepper.
4. Pound chicken to a uniform thickness, about 3/4". Coat with mustard mixture. Grill or broil, brushing with mustard mixture, 3 mins. Turn and cook, brushing with mustard mixture, until just done, about 4 mins longer.
5. Grill or broil scallions alongside, turning, about 4 mins. Serve chicken with scallions and onion marmalade.
