Ingredients
- 1 cup butter
- 1 1/2 cups icing sugar
- 1 egg
- 1 tsp vanilla
- 2 1/2 cups all purpose flour
- 2 squares semi-sweet chocolate, melted
- 1/2 cup chopped pecans
- 3 to 5 drops green and red food colouring
- 1/4 cup finely chopped candied cherries
- 1/2 tsp almond extract

Preparation
Step 1
Cream butter and sugar. Beat in egg and vanilla. Gradually add flour and mix well.
Divide dough into three portions
Add chocolate to one
Add pecans and green food colouring to the second.
Add cherries, red food colouring, and almond extract to the third.
Roll each between pieces of waxed paper into 8" x 6" rectangle. Remove wax paper.
Place chocolate on a piece of plastic wrap.
Top with green and red rectangles and press together.
Wrap with plastic and chill overnight.
Cut dough in half lengthwise and slice into 1/8 inch slices.
Place 1 inch apart on ungreased baking sheet.
Bake at 375 F for 5 - 7 minutes.
Cool for 2 minutes, then remove to wire racks.
