  • 2 cups plus 2 T. flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup margarine
  • 3/4 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 pint blueberries
  • STRUESEL TOPPING
  • 1/4 cup margarine
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon cinnamon

Step 1

Preheat oven to 375. Grease an 8 inch springform pan.

Sift together 2 cups of flour, baking powder and salt. Cream the margarine and sugar until fluffy, about 3 minutes. Beat in the egg. Add the flour mixture in three parts, alternating with the milk.

Toss the berries with the 2 tablespoons of flour and fold in. Pour batter into prepared pan.

Combine topping ingredients to make a crumbly mixture. Sprinkle over batter. Bake for 1 hour.
