Ingredients

  • 1 tablespoon olive oil
  • 2 cups sliced onion
  • 1/4 cup lemon juice
  • 1 pound cooked turkey breast meat, cut into chunks
  • 2 tablespoons curry powder, or to taste
  • 2 medium apples, cored and thinly sliced
  • 6 whole wheat pita bread rounds
  • 1 cup low fat plain yogurt

Preparation

Step 1

Heat the oil in a skillet over medium-high heat; stir in onion and lemon juice and cook until onion is tender. Stir in turkey and curry powder; cook until heated through. Remove from heat and stir in apple slices. To serve, stuff pitas with turkey mixture and drizzle with yogurt.

SERVING SUGGESTION: Serve a big spinach salad on the side.
VEGETARIAN: Use soy turkey meat.
KOSHER: Use soy yogurt.
