Ingredients

  • 16 large sea scallops, about 1 pound
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon minced fresh thyme
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 3 ounces prosciutto, paper-thin
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon kosher salt
  • 2 large Golden Delicious apples

Preparation

Step 1

1. Wash scallops and remove the small, tough side muscle. Place in a bowl and add oil, thyme, salt and pepper; stir to coat. Cut each prosciutto slice lengthwise into two strips and wrap around each scallop. Thread through their sides onto each of 4 skewers. Place on a plate, wrap and chill 30-60 minutes.

2. Whisk together honey, lemon juice, and salt. Set aside.

3. Peel and core the apples, then cut crosswise into 1/2" thick ringas. Grill over direct medium heat until golden and tender, 4-6 minutes, turning once halfway through. Brush both sides with glaze and grill another minute per side.

4. Grill scallops over direct medium heat until just opaque in center, 4-6 minutes, turning halfway through. Brush with glaze during last 1-2 minutes of grilling time. Serve scallops warm with apples.

Notes: an OMG recipe - one of the best ever. Simply outstanding and so easy it's mind-boggling. Used dried thyme instead of fresh and drizzled extra glaze on individual servings just before eating. Skipped the apples in the recipe.
