Ingredients

  • 1 pound 95% lean ground beef
  • 1 cup chopped onion
  • 3 cloves garlic, pressed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 (10-oz.) can tomatoes with green chilies (Rotel is a good brand)
  • 3 large bell peppers, mixed colors
  • 1/2 cup chopped cilantro

Step 1

In a skillet, saute beef and chopped onion together over medium-high heat for 10 minutes or until beef is cooked through. Add garlic, spices and tomatoes and cook together for 10 minutes. Meanwhile, thinly slice bell peppers; add to skillet, reduce heat and simmer for 5 to 10 minutes, depending on how soft you want your peppers.
