Depending on the fat content of the pork, these can be eaten with fingers or toothpicks. Easily frozen and re-heated for a quick appetizer. Very tasty.

Ingredients

  • 1-1/4 c All Purpose Flour
  • 1/2 tsp coarse salt
  • 1/4 tsp ground pepper
  • 1/2 tsp cayenne pepper
  • 2 c grated cheddar (1/2 lb)
  • 1 lb bulk breakfast sausage
  • 1/2 large yellow onion, grated
  • 3 TB unsalted butter

Step 1

Preheat oven to 400; line baking sheet with parchment.

Mix all ingredients with your hands until well-combined. Roll into generous 1-inch balls (they will shrink). Place 1/2" apart on a parchment lined baking sheet. Bake until golden and cooked through, est. 25 minutes.

Serve warm. Makes approx 45. (70 cal each; 5 g fat)
