Ingredients

  • 1/3 cup sliced onion
  • 1/3 cup sliced bell pepper (any color)
  • 1/3 cup fat-free liquid egg substitute (like Egg Beaters Original)
  • 1 Morningstar Farms veggie sausage patty (or another frozen low-fat sausage patty with about 80 calories)
  • Two 6-inch corn tortillas
  • 2 tbsp. shredded fat-free cheddar cheese
  • 2 tbsp. salsa

Step 1


Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add onion and pepper and, stirring occasionally, cook until softened, about 5 minutes. Transfer to a large plate and set aside.

Remove skillet from heat, re-spray, and return to medium heat. Add egg substitute and scramble until fully cooked, about 2 minutes. Place on the plate, next to the veggies, and set aside.

Prepare sausage patty according to package instructions, either in the microwave or in a skillet sprayed with nonstick spray. Once cool enough to handle, slice into strips, and place on the plate beside the egg scramble and veggies.

Place tortillas on a microwave-safe plate, and warm slightly in the microwave, about 30 seconds. Assemble fajitas by evenly distributing veggies, scrambled eggs, and sausage strips between the two tortillas. Evenly top each with shredded cheese and salsa. Roll or fold 'em up and eat!
