Parmasean Scallop Potatoes

Ingredients

  • 1/4 Cup butter
  • 2 lbs yukon Gold Potatoes (peeled and sliced)I use my mandalin slicer or my Cusinart.
  • 3 cups whipping cream
  • 2 garlic cloves chopped
  • 1 1/2 tsp salt
  • 1/4 tsp finely ground pepper
  • 1/4 cup fresh flat leaf parsley chopped
  • 1/2 cup or 2 oz frated parmeasean cheese

Preparation

Step 1

Melt butter in a large dutch oven over med to high heat, stir in potatoes and next 5 ingredients and bring to a boil. Reduce heat to Medium low and cook 15 to 20 minutes stirring gently until potatoes are tender. Gently spoon mixture into a lightly greases 13 X 9 Inch baking dish and sprinkel wih parmesean chees. Bake at 400 for 25 to 30 minutes or until bubbly and golden brown. Let stand 10 minutes and serve.
