Ingredients

  • 1 cup butter, softened, 2 sticks
  • 8 oz cream cheese, softened
  • 2 1/4 cups sugar
  • 6 eggs
  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 1 tbsp vanilla extract
  • 1 cup butterscotch chips, 6 oz
  • 1 cup chopped pecans

Step 1

1. Cream the butter, cream cheese and sugar in a mixing bowl. Add eggs 1 at a time, beating well after each addition. Add flour and salt gradually, beating constantly. Add the vanilla. Fold in the butterscotch chips and pecans. Spoon into a well greased tube pan.

2. Bake at 325 for 20 mins. Reduce oven temperature to 300F. Bake for 75 mins more or until wooden pick inserted in center comes out clean. Cool in the pan on wire rack for 10 mins. Remove form pan and cool to room temperature.
