Ingredients
- 4 SERVINGS
- 1/4 cup olive oil
- 1 1/2 tablespoons sherry vinegar
- 2 teaspoons ground cumin
- 2 cloves garlic, crushed
- 2 tablespoons honey
- 1 teaspoon salt, or to taste
- 1 chicken, 3 to 3 1/2 pounds, trussed.

Preparation
Step 1
Mix the oil, vinegar, cumin, garlic, honey and salt together in a small bowl.
Place the chicken in a shallow bowl and brush with the mixture.
Marinate at least two hours in the refrigerator, rebrushing with the mixture from time to time.
Preheat oven to 350 degrees.
Roast the chicken on a rack in a roasting pan or, if available, on a spit, until it is done, about one hour
Continue brushing the chicken with the marinade as it roasts.
