  • 1 1/4 cups old-fashioned rolled oats, plus extra for sprinkling
  • 1 cup white whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground allspice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1 large egg
  • 1 cup mashed banana (about 2 medium or 3 smaller ripe bananas)
  • 1/4 cup honey
  • 2 tablespoons pure maple syrup
  • 1 1/2 teaspoons vanilla extract

Step 1

Preheat the oven to 350ºF. Line an 8x8 inch square baking dish with parchment paper and then spray lightly with nonstick cooking spray.
In a medium bowl, whisk together the 1 ¼ cups oats, flour, cinnamon, nutmeg, cardamom, allspice, baking powder and salt. In another medium bowl, mix together the egg, banana, honey, maple syrup and vanilla. Add to the bowl with the dry ingredients and mix until just combined (do not overmix). The batter should be thick. Transfer the batter to the prepared baking dish and spread in the pan. Sprinkle the top lightly with additional oats if desired.
Bake for about 15 minutes, or until a toothpick inserted into the middle comes out clean. Transfer the pan to a wire rack to cool completely. Once cool, cut into squares.
