Ingredients

  • 1 lb cavatappi, elbow or penne pasta
  • 5 T. butter
  • 12 oz gruyere, grated
  • 1 qt half and half
  • 4 egg yolks, lightly beaten
  • 1/8 tsp ground nutmeg
  • 1 c. panko bread crumbs

Preparation

Step 1

Preheat oven to 325
Cook pasta 2 minutes before suggested time, drain.
In med bowl, melt 3 T. butter in microwave on defrost for 1-1/2 min until just melted. Set aside to let cool slightly.
Set aside 1/2 c of gruyere and put the rest in a large bowl. Add half and half, egg yolks and melted butter and nutmeg. Whisk to combine well. Add the pasta and stir thoroughly
Using the same butter bowl, melt the remaining 2 T butter until just melted and add breadcrumbs.
Add the mac and cheese to a greased casserole, Top with remaining cheese and bread crumb mixture.
Coat foil with Pam and cover casserole. Bake for 30 minutes then remove foil and cook another 15-20 until golden. If not golden enough broil for a few minutes. Let stand for at least 10 minutes before serving.
