Ingredients

  • 2 cups cold cooked rice
  • 3 eggs, beaten lightly
  • 1 tablespoon soy sauce
  • 1/4 teaspoon sesame oil
  • Salt and pepper
  • 3 tablespoons vegetable oil
  • 1/4 lb. shrimp meat cut in 1/4" pieces
  • 2 slices cooked bacon, drained, cut in 1/4" dice
  • 2 green onions, chopped

Step 1

Use chopsticks or a form to separate the rice grains. In a small bowl, combine the eggs, soy sauce, sesame oil and salt and pepper. Set aside.

Heat wok. Add oil by pouring it around the rim. This seals the wok and heats the oil quickly. Add shrimp, if using, bacon and green onion. Immediately add rice and stir fry over high heat, after a few minutes the grains will separate.

While stirring rice, pour in egg mixture. Stir fry 1 minute. Serve rice in a warm Chinese bowl to retain heat during serving.
