Great Pressure Cooker Red Beans

Ingredients
- 1 pound Camelia red beans
- 1 tablespoon parsley
- 2 tablespoons bacon drippings
- 1 pound ham seasoning (cubes)
- 2 tablespoons olive oil
- 1 piece pickled meat (optional)
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1 bunch green onions and tops sliced thin
- 1 bay leaf
- 1 medium onion, minced
- 1/2 teaspoon dried Italian seasoning
- 1/2 medium bell pepper, minced
- 1/2 teaspoon lemon pepper
- 4 pieces celery with leaves, minced
- 2 chicken bouillon cubes

Step 1
Soak the red beans in water overnight. Drain and rinse well.
In pressure cooker pot, heat olive oil and bacon drippings. Add garlic, onions, green onions, bell pepper, celery and parsley. Sauté about 5-8 minutes.
Add remaining ingredients including drained beans. Add enough water to cover beans by at least 1 inch. Pressure cook 25 minutes. Uncover.
Continue to cook about 15 minutes to thicken. Serve with rice and French bread.
